I'm a veteran of Red Hat's subscription service where I can pick and choose
which updates will be automatically installed, which ones require review, and
so on. Is there a way I can have my system automatically install critical
and security updates, notify me of optional updates for my review, and never
eer notify me of those useless "windows defender" installs?

You'll have to compromise a little and use the Notify Only option to avoid
downloading and installing unwanted updates.
