How do I stop Vista remembering passwords for email/on-line banking etc?

For email and on-line banking... I assume you mean you're using IE for email
and on-line banking, right?

If so, read on... if not... please list specific applications.

In IE, click on Tools | Internet Options (in the menu bar)

In the Internet Option dlg box, click the Content tab.

Click the Settings button in the AutoComplete section

Deselect the "User names and passwords on forms" check box.

Click OK

Click OK

Done.

Did you search Windows Help and Support? I put in "remember passwords" and
the third link looks like it might've answered your question.
