when burning stuff onto a CD-R, I use the 'Write Session" option instead of
the "Write Disk" option so that I can add more stuff at a later date, but
when I do add more stuff, all of the previously recorded sessions disappear
and only the latest burn session is visible.
What has happened to the previously burnt stuff? and can I get it to
reappear on the CD?
(ps. I'm burning the stuff using Toast, on a Mac, all of the sessions are
visible on the Mac desktop, but only the newest session is visible on the PC
desktop).

Try the Mac forums i9nstead of the Windows which you just did.

Meanwhile are you using a CD-R or is it a CD-RW. Writing to the CD-R then removing it and then trying to write to it again will usually (always) create this scenario if not finalized

Toast and Windows Burning wizard use incompatible recording formats. Vista
uses UDF, if Toast supports, try writing in that format.
