How to change Recent Items from Start menu

The list of Recent Items displayed from the Start Menu always shows the
results alphabetically without regard to how RECENTLY I worked on the file.
Files that were saved 5 minutes ago do not show because the name starts with
"s" while files that have not been touched in weeks show because they start
with "i".

Can I change this to show the most recent files?

Open the folder in explorer, and sort by date modified. You would not effect
the start display, but it will sort them. Rightclick the Recent Items icon
on start, and click "Explore"

Okay, that helps a little but is there a way to change the default setting
for the Start display so I don't have to do this every time?

I don't know, but if you just type the word 'recent' into
the search box, it will return a list of recent files in the
correct order.
