Character Set in windows Live Mail

When printing a sent e-mail I end up with strange characters for a number of typed characters that appear OK to view but print as other characters e.g. dashes "-" become a combination of foreign "a" plus the Euro sign and inverted commas. How do I prevent this happening. I have seen references to adjusting the send properties in tools, but there is no "tools" option in Windows Live Mail. Any advice would be great!

It would have been helpful if you had told us which version of Windows Live Mail you have. The user interface was changed
considerably between the 2009 and 2011 versions.
