This seems like a trivial question but I've created an email but don't
want to send it right away for possible later corrections. How do I
simply place it in the "Drafts" section OR how do I create a draft
email?

If you X out, it will ask if you want to save changes. Yes puts it in
Drafts.
Ctrl+S also saves it to Drafts.
