Can someone suggest a book that walks you though setting up a DFS
step-by-step? Also, and even more importantly, can someone suggest a resource
for how to add in a new DFS server and remove old servers?

I attempted to do this intuitively and it was a disaster basically. I logged
on to the new server, moved data from a different server to the new one using
NTBACKUP to try and give it a head start, added it into the DFS hierarchy,
created the connections, and thought it would work. It did nothing. Today, I
went on a different server, right-clicked the root and selected Configure
Replication. After walking through the wizard, the root got a blue icon on
it, and then all of the files on all of the severs were moved to the
DFSRPRIVATE folder and a DO_NOT_REMOVE_NtFrs_PreInstall_Directory showed up.
Disaster. I turned off Replication and left it at that for now.

Read "How DFS works"

There are 10 types of people, those that understand binary and those that don't.

Definitely Mark Minasi books by Sybex.

His book "Mastering Windows 2003 Server" is great. I paid $ 69.00 back in
the day now it's $ 10.00 on Amazon and E-bay. He has a fantastic way of
explaining even the most boring and technically complex material. I learned
how to set up DFS-NTFRS in an hour using this book. See below:

Last year I made the mistake of buying another Windows 2008 book and it's
not nearly as good as the Minasi Sybex books. You spend pages reading about
the history of something and how great it is then when you finally get around
to the part about how to set it up, it refers you to the CDROM. arrgh.
