DFS/FRS with "My Documents"

I had thought it would be an interesting concept to have DFS/FRS setup with
"My Documents" so that if one server mysterious dropped dead in the middle of
the day, my users (teachers and students) would be able to maintain some
workflow until I restarted the suspect server.

My knowledge of DFS/FRS is beginner, but I do find the ideas fascinating.
I've always done things using Group Policy Folder Redirection. In my
experience, it has always worked well. I'd like to know how if it is even
possible to set this up.
