Documents folder on another hard drive

Is it possible to put the Documents folder on a drive other than the C drive?
If so, how do I do it? Do I go to Properties & change the path? I want to
build a PC & I want to set up the Documents folder on a RAID mirror so if one
drive crashes, I'll still have my files.
