How can I change the START | Documents | Documents folder to a
different default?

Hi Dean,

This will show you how to change the default location for the Documents
folder in the Start menu to where you want it. Just make sure that if
you have a program that places a folder in there, that you change it's
location in that program to.

Create the destination folder first
Click the Start button
Right-click the special folder (Documents, Music, or Pictures) and choose Properties
Select the Location tab
Click Move and select the target folder
Click Apply
Click Yes when you're prompted to move the files to new location
Click OK
