UAC can be a bit annoying in the beginning when you're first setting up
your computer, when you have hundreds of drivers and applications that
need installing. You'll notice that the frequency of the UAC prompts
will decrease after a few days the closer you get to an optimal system
with everything installed and tweaked just the way you like it.
Take my advice (as well as that of SG), and leave UAC on. The day will
come when it pops up without warning, and that prompt will save your
bacon by preventing malware from executing without your permission.
