Dynamic disks are not supported in Windows clustering regardless of version
2003 or 2008. You need 3rd party resource .dlls from Veritas to provide
that functionality.

Additional option you may or may not be aware of:
If you have drive expansion technology available on the SAN, you can use
the "extend" option in diskpart to expand disks as needed.
