Windows Server 2003 doesn't support the boot\system drive being GPT.
With Windows Server 2008, this is supported if the hardware(bios firmware)
supports EFI.
Windows Vista and Windows Server 2008 both support booting from EFI
hardware to GPT disks with x64.
But the first thing to consider is the hardware has to support this.
