Mail Receipient - Plain text format?

In OE, it was easy to specify if a particular contact required plain text
format email, but I cannot find that option in WLM. Is it at all possible,
or do I have to change the formatting each time I mail that particular
contact? That is THE "most missed" thing in OE, for me. Thanks!!

Looks like that feature was left out, probably because the Contacts
are not as integrated with WM as they were with OE.

Thanks Gary. I was pretty sure of the answer, but was hoping I was
overlooking the obvious.

I just checked Windows Live Mail to see if it does any better in
this regard, but no dice.
