Migration from 2003 to 2008 with different domain

Hello all.... we are a medium size company that is splitting into 2 distinct
companies. The company i am in is moving to a new building with no network
infrastructure at all! I will of course be installing a few Win2K8
servers.....

The goal is to bring over 40 existing PCs from the current location. However
logon domain will be different and we use roaming profiles. SO my question is
how can i change domain names and still keep the user's old domain profile
intact.
