It actually is possible in Computer Management.
Open Computer Management, go to "Local Users and Groups">"Users"
Doubleclick the user you want to change. On the tab Profile you can change
the profile path.

seem to be available on Vista Home Premium - which version do you have?

I have Vista Ultimate, I guess that's only available in the business and
ultimate versions..
I don't know if there is an easier way to do it, but you can edit the
profile path in the registry.

In the key
HKLM\Software\Microsoft\Windows NT\CurrentVersion\ProfileList\(user ID)\
there is a value named "ProfileImagePath".

Change it to the path you like, and then you have to manually move the
folder to that location.
