Question about Windows Update

I had installed SP2 on my wifes laptop and had a lot of problems so I
uninstalled it and everything is working fine.

Question is: Can she still get specific updates such as IE SP2 updates to
protect her Internet Explorer without having the full SP2 on her laptop. If
so, how do we go about getting those updates?

No, not possible.

What problems did you have with SP2?

Her laptop kept freezing up, ran slower, trouble accessing internet.

Since we reverted back, we have had NO problems.

Did you get the latest XP device drivers from the hw mfrs' websites &
install them in device manager? Clean the system with all known good
anti-spyware/malware apps (recent versions, updated) before installing?
Check for viruses/trojans?
