Hello karent,

Schema update is a one time step. 2003 uses version 30, 2003 R2 31. You can
check with "schupgr" in a command prompt.

It seems like something else is going on. Follow the Metadat Cleanup
procedure in the following link to see if the old server is still in the AD
database. If it is, remove it. Also make sure it is out of Sites and
Services.
