This means your account hasn't been verified. In order to change your display name, you need
to click the verification e-mail sent from Windows Live ID Services.

Sometimes it can take nearly a day for the e-mail to arrive if you just signed up. However,
assuming you haven't received it, you can request another verification e-mail from here:

Hi.

I have the same problem, the display name is greyed out. But I have verified
my account and it did not help. The problem started after I changed my user
ID.

I'd give it 24 hours to register your new ID then try again
