Greetings,
A packet scanner like Wireshark (which has a built-in filter for the Messenger protocol) is
useful for this:
http://www.wireshark.org
After you've gotten some packets, just type msnms as a filter and there you go.
However, the proxy option in Messenger applies only to the server connection and peer-to-peer
connections do not go through the server (so I'm not quite sure what you're looking for).
