Have you rebooted since extending the partition? I'd start with that.

Mind you, 25Gb for the C: partition on SBS is plenty. Ideally, you move
all the data off C: to other partitions - Sharepoint, Exchange, Users
folders, etc. - and keep C: just for the SBS OS components. There are a
number of logistical reasons for doing this, most of which are not vital,
but there is one key reason for doing so - Windows does not like to run
out of space on the OS partition, and moving all the "growable" data off
helps to avoid that scenario.

RAID0 is an absolute no-no on a server.

There are many many different ways to organise your partitions, and
varying opinions on the "right" number. Most (I think) will agree that you
want _at least_ OS + Data.

Disk quotas on users personal folders might be another reason for an
additional partition, as these can only be set at the partition level. R2
has an alternative mechanism to disk quotas, FSRM, that is more granular.
