In WSUS 3.x it's as simple as starting the WSUS configuration assistant
and on the new server, remove the checkbox on the third screen "Replica"
and select Microsoft as the update source on the same screen (my WSUS
consoles are all German, so hopefully I didn't misspell something).

Wait for some time to let things settle (a day or so), and remove WSUS
from the old server.

Yes, I did something very similiar (swap master and replica) not too
long ago.
