As said before depending on the Exchange version you can't do a domain rename.
With Exchange 2003 it is possible, for detailed information start here:

Also you should built a lab to test it once and get familiar with the needed
steps.
The rename has no effect on user authentication and sometimes to 2 reboots
are required to get all information updated on the domain machines.
