1. Export them to .pst files and import on Exchange 2007. You can use exmerge
to export in Exchange 2003:

and use this way to import them in Exchange 2007:

2. In the new Exchange configure the SMTP address name for your needs and
inform your ISP that the Exchange server is new with the information that
he is able to update the records.
3. Normally not as the .pst file isn't domain independent
