Hi,
Notes are stored as separate files. They are stored in the My Documents
folder on the device. So when you choose to sync Files this will also
include the notes and they are placed in a folder of your My Documents
folder on your PC. Also, you can choose to sync the notes using the Notes
function which will place them in Outlook in the correct folder.

There is no option to exclude file types to sync with your PC.
