I would not let those two boxes see each other. You can use the same domain
name and same server name, as the Security IDs will be different.

Create the new SBS, test it off site, in the lab, whatever. When you know
you have a fully functioning SBS, and you can import the mail, then go live,
but going live in this case means removing (disjoining) the stations from
the 'old" domain and using http://connect joining them to the new domain.
You can use a USB drive or SkyDrive or anything you can reach, but keep
the SBS old and SBS new off the same wires. Othewise they will start to
hiccup.

At that point, and when you are happy with the new server and domain, you
can leave the old server until you are sure you have all the data and permissions,
and then you can turn it into a RDP server or whatever you wish.
