It will most likely not be a problem. The reason for the 512 MB size is that
NTFS becomes more efficient at the 400-500 MB range.

Add a second disk then move the quorum to the new disk.

Why would you want to if it isn't needed?

It would make more sense to create a new LUN and move the quorum to the new
LUN or create a MNS quorum, move the quorum to MNS, delete the old quorum,
create a new one using the new disks, and them move the quorum off of MNS
and put it on the new disk.

Extremely low risk.
