I can't imagine any reason to not keep Exchange on the SBS 2003 box.
Just because they don't currently use the features doesn't mean they
would not use them if they actually understood them. In every shop that
I've been to/in, where they had just Server 03/08, where the shop was
small enough, they all thought that Exchange and the Intranet website
were very valuable, even for a group as small as 3 people.
Why not show them how the extra features of SBS benefits them, how easy
it makes management of users and backups, how nice it is to have email
that doesn't get lost/trashed when a workstation is corrupted....
