WinNT 3.5x (and I presume 3.1) had problems installing on machines that were
"fast", and by "fast" I mean anything over a Pentium or so...

There is a patch to fix this, but the problem still exists for modern
processors as they're still too fast for the patched version. I have the
files that need to be patched, but I can't for the life of me remember where
on the internet I found them.
Even though I'm patching my install files I still get the same error on my
2.8GHz P4 :-/

My suggestion would be to find an old (P-II ?) computer and use VPC to
install and service pack it before transferring the VHD over. My plan at
present for getting NT 3.5x into my Virtual Server is to lower the (P-III)
CPU's speed, install, patch, then increase the speed and see if it remains
stable.

Yes, this is a problem with NT3.x that carries over from real hardware as I
recall. A bit of digging seems to turn up CPUID as a possible culprit. But,
I do know that there was a patch that you could make to .\i386\INITIAL.IN_
and .\i386\setup.in_ that allowed me to get NT3.5 on my 866MHz Pentium-III
in VirtualServer, but it was still a bit unstable, and I was never able to
get the included driver for the NIC working, or find a WinNT3.5 driver from
intel or DEC/Compaq/HP...

Of course I don't really have any experience with NT3.x on a x86 faster than
66Mz, anything faster than that and it was on a 150MHz Alpha. The only
company I ever worked with that used NT3.x had a rather high OS upgrade
cycle, but ran the hardware into the ground ;-)

Works fine for me.

I do remember having some issues installing, but nothing like you describe.

I don't find the performance too bad

NT 3.51 works fine in VPC (as fine as any OS without the Additions can be),
though the installation can be fiddly.

I have installed 3.51 Workstation and Server onto VPC 2004 SP1 using both a
733Mhz P3 and a 2GHz P4. I have written a guide on how to go about doing it,
I'll get it published on to the net in the next few days.
