You cannot extend certificate validity periods.
You can generate a new certificate (and go through whatever hassle to
get it trusted wherever you need it to be trusted), or you can buy a
trusted certificate (for upto 10 years), and not have to bugger about
(beyond installing the certificate on the server).
I used to stick with the self-signed certificates. With the plethora of
devices in use today, I now use trusted certificates. In the overall
scheme of things, it just works out much cheaper.
