How to restore the correct apps that starts by default depending on the file

Right click a file with that extension and choose Open With.
If the proper program is not listed click Choos Default Program ...

And remember to check the box that says "Always use the selected program to
open this kind of file".

That box appears to be checked by default. At least I don't remember
changing it.
