Can one do a PC backup to one disk and restore to a different disk?

I have a PC with the following disks installed: a 320GB disk with Vista Business
installed on partition C of size 15GB and two data disks of 120GB. I want to
backup the C image onto one 120GB disk and later restore it to the other 120GB
disk.

By disks I presume you mean partitions. Why not do your backup image straight to the partition that it will stay all the time.

No, I mean different disks. I want to move Vista to a different physical disk.

Yes. It wouldn't be much of a backup if it did not.
