How to roll back security updates

Hello all, does anybody has a guide for "how to roll back" security updates
for W2K3, SQL in case somethings went wrong.

1) roll your system back with a System Restore Point (not really
sure if W2K has these or if they came in with XP)
2) un-install them from Control Panel Add/Remove Programs IF you
know which one(s) you want to kill
