I have another question RE: SBS 2008 premium...

Would the SBS premium edition ship with Windows Server 2008 R2? I am
assuming yes but want to verify for sure... Apparently the R2 version has
really improved on the Hyper V virtualization side of things...

No, it's Server 2008 RTM.

While there are improvements in Hyper-V, as well as the rest of Windows
Server, in R2, none of them are critical to implementing a virtual solution
and shouldn't be the determinant for making the move. That being said, you
also have the option of using the free Hyper-V Server R2 as your
virtualization parent. It does mean some command line setup, and you'll need
a Win7 client to manage the hyper-v side of things if you don't feel
comfortable with PowerShell. But it gets you all the updated features in
Hyper-V R2.

Hey Charlie... I jsut thought of another question.... You indicated that I
would need a windows 7 client to manage the hyper V side of things... Can I
manage the hyper V installation on the server from my own Windows 7 pc OR
would I need to create a virtual windows 7 hyper v client on the virtualized
server to do this???

You can use any Windows 7 (Professional, Enterprise or Ultimate) that has
network connectivity to the host. Your host will NOT be a domain member, so
there are some issues setting up initial connectivity, but using HVRemote
will solve those pretty easily.
