I have a new all-in-one which I have never had before. I scan a document and
it goes to Hp photosmart 3.0 and my Documents folder. I cannot copy and paste
from the scanned document in either. Is there a solution? could be I just
don't know how . Thanks for any help.

It sounds to me like you expect a scanned document to be text, when in fact
it's an image of the document. There are Optical Character Recognition (OCR)
apps that will do that.

Use the "Ratings" feature. It helps the new users.

For OCR programs, if you should have Microsoft Office 2003 or other versions
there is Microsoft Document Imaging which is included as part of the
program. My AIO printer had OmniPage 14 Pro as part of it's installation
software. While I don't know what software was included with your HP I am
reasonably sure that they included some OCR software with the
printer/scanner. A model number may also enable us to help you search for
the software that was on your install CD.
