Shadow copy issue

My apologies if this should be posted in another thread.

I'm hoping someone might have some ideas. I have a server set up to use
Shadow Copy on the shared folders on a drive. I was working with a shadow
copy from 2 days ago yesterday. This morning it seems to have done a new
backup, and the version from (now 3) days ago has fallen off the list. I'm
assuming some of the backup may have been overwritten for space by the new
version. Is there ANY way I could get to whatever might be left from the
shadow copy that is now off the list? I've some desperate users.
