I apologize if this has been asked before, but is there a MS site that lists
what files/folders may be safely deleted if one is satisfied with the SP2
installation?

Not MS sites, but I have safely removed the uninstall files for SP using the
information provided here:-

Tidying up after installing SP2
and/or

Removing the uninstall information

Save Space After Installing Updates
