How the heck do we switch to plain text when composing in Windows Live Mail
(ie Hotmail)?

On the compose screen, Format, Plain text. If you don't see the menu bar,
press the Alt key.

In the New Message window click Format and choose Plain Text. To make
that permanent, in your Live Mail window go to Tools - Options - Send and
activate the Plain text default button.

Does anyone know how to copy the entire content of a name in the
Contacts folder, like we could in Address Book, by right clicking the name
and choosing copy? Or will Address Book run in Vista?

It is clumsy, but the only way I have found to copy a name from Contacts
is to right-click on that contact, select Edit. The Edit screen allows copying.

It appears to be a clumsy copy - can you copy the name+ email address in
some way?

No, that would take two separate copy & paste operations.
