Is there a way to make BCC the default? Or at least remove CC from the
options in an email? Email security almost demands it and it's hard to
believe that it is so overlooked by Microsoft.

To turn BCC: on...
In an email compose window, View - All Headers

It will stay that way for all new emails.

I know of no way to turn off CC:

Found that Mozilla Thunderbird allows BCC by default. Seeya Windows Mail!

Windows Mail has BCC, you just need to turn it on

Thunderbird is a good program, but I do not think you can transfe
anything from Windows Mail to it. You might consider trying the fre
Windows Mail Live (WLM) also. It supports Pop3, IMAP, HTTP website (EX
Hotmail) email, and is a lot more stable. Plus, WLM will minimize to
tray bar icon and has a separate Inbox for each email account. WLM wil
automatically import Windows Mail messages, accounts, and settings int
it. Contacts will have to be manually imported from within WLM. (Tools
Contacts, File, Import, Address book for current Windows User.) To se
the Menu bar, press ALT+M and check "Show all menus". You can get
pop-up notification by having Windows Live Messenger installed an
