Right now, I'm using the Windows XP Pro. I'm developer. Which is the best
version of Vista I can use if I want to upgrade it ?

You can upgrade to the following Windows Vista SKUs:
Windows Vista Business
Windows Vista Enterprise (Volume License Agreement only)
Windows Vista Ultimate

You have to choose one of these SKUs because Windows XP shares their common
core operating structure.

When upgrading from XP Professional, you have a choice of Business or
Ultimate (also Enterprise if you want a volume license).

The question "which is best" has no real answer. There are more
features in Ultimate than in Business, but those extra features make
it better to you only if you have need of those features.
