how to verify client's server software?

I'm starting to do IT consulting and a client said he lost the install
software of his windows server. I want to know whether his software is legit
before I continue work, and the easiest way is to attempt a windows update,
right?

But I don't really want anything to be updated at this time for fear of
destablizing the server, which probably hasn't been updated for a long time.

No. It may not be "legit" and still update just fine.

You don't need the "install software", you need the license.
