Yes it would be possible however it would require decoding, some software development and
capturing of the data so it certainly wouldn't be a live thing.
It's very unlikely someone would actually go this far and actually have access to do this.
But, if you're worried, Skype (
www.skype.com) can provide you with encrypted voice/video.
