I found a solution to my own problem, so for the sake of closing out this
issue here is what I did:
I went into Control Panel>Add or Remove Programs>Add/Remove Windows
Components and unchecked UDDI. After the update from this change completed
(though UDDI had never shown up in the Services control!) I re-ran W2K3 SP1
and it was succesful.
Now this provided me with a W2K3 SP1 system but, of course, without UDDI,
which in this case was not really needed ... had it been, well ...
