Windows Update auto restart loses unsaved work!

I come to my laptop in the morning and find that windows downloaded "critical
updates" and automatically restarted. All my open apps have been closed down
and work in progress was lost. Why is this and what can I do to prevent it
in the future (it has happened a dozen or so times already).

Save your work, or turn automatic updates off.

Sorry, AU doesn't do that. Perhaps if one visited WU, maybe.
