You should better post this to a HP newsgroup, the questions belong more
to hardware and the use of smartstart then to windows. We also use HP servers
since G2 versions and install the support packs and depending on the needs
we use more or less the features of it.
Basically you can install any server without them and also without installing
smartstart. Personally i like the smartstart, especially for preparing the
RAID configuration and also later on if need to add additional disks or a
MSA.
I run some 2008 VM's (VS2005 not hyper-v) on an old DL580 G2 server with
2 1,5GHz procs and 2GB RAM and installed them properly without smartstart.
Also i am not sure if smartstart is supported in VM's, because you have to
use the Hyper-V Integration Services. So based on the hardware with G5 servers
it should run on your machine as well. The G5 versions are really good machines,
we use them with 2003 for different roles/applications.
