I'm running a WSUS server, on port 80, can I reconfigure this to use a
different port after it's been installed?

Yes.. on the server which is running WSUS all you have to do is inside IIS
change the WSUS page to use a different port other than port 80. You would
also have to change the path to WSUS in group policy for your client machines
to get to the correct path, such as http://servernameort#
