WSUS - time of update installation

I couldn't find a WSUS group so I hope posting here will be ok.

I have a WSUS server that has been working perfectly. However, after
pouring through the documentation I didn't see any options on 'when'
and/or what date the updates would be installed.

Example: I want to patch all my servers but I don't want WSUS doing this
in the middle of the day and then rebooting the servers. Same applies
when the nightly backup is running.

Spent a couple of hours going the knowledge base and google to no avail.
Gotta believe there's a option in WSUS for this.
