I have recently moved from a single DC to having 3 DCs with one domain in
multiple subnets. All 3 are running AD with integrated DNS. I noticed that
they all have the option selected when I go to the server name, properties
and then the interfaces tab, for the option
    Listen on:
The option All IP addresses is selected. My first question is is it
beneficial for me to change to the : Only the following IP addresses and if
so what will change and which IP addresses should be there, should it be the
server itself and the other two or just the other two.
Any guidance would be appreciated, I'm pretty much a noob with DNS so
detailed direction is a great thing.
Thanks in advance for any advice.

If, and that's a big *IF*, you have multiple IPs on a DC, the Interface tab
is asking you which Interface DNS should listen on for DNS resolution
requests. That's all it is. Normally if one IP, you can leave it to All IPs.
If multiples, you would determine which interface it should listen on.

Just an FYI, if you have multiple IPs on a DC, that can be problematic and
    can cause numerous issues.
