Backing up and restoring SBS Sharepoint Services SQL database with BackupExec

We are about to start to use SharePoint Services for a document database. I
want to get the backup/restore issues sorted before we go too far. We plan
to carry out a nightly backup to tape using Veritas BackupExec 9.1 and we
have the SQL agent. I am very confused about what I am meant to be selecting
for a pure backup of the Sharepoint database and nothing else. If someone
loses an important document and wants it restored, I plan to take a quick
backup of Sharepoint to disk, restore from the appropriate tape (some while
back) get the document into the file system and then restore back from disk.
This seems the only way of retrieving important documents without losing all
the recent input. (I wish there was an agent like the Exchange one where you
    can get back individual emails).

I am not sure of what to backup. In the selection list I obviously have to
choose "Microsoft SQL Server "SHAREPOINT". Is there anything else I should
choose to backup? What about "Microsoft SQL Server" and "Shadow Copy
    Components"? Any others?

When restoring, is there anything I should look out for or be aware of?

    Kind regards,

    Hi Frank,

We are using Premium and therefore using the full SQL database rather than
    the desktop one.
