I have a number of machines where the users are rarely in the office.
I have a WSUS environment running fine. Could someone point me to some
documentation where i could just point this 1 OU of machines to look to
    microsoft for the updates.

Also, is it possible to have the machines point to microsoft but still
have the patch approval be handled by WSUS. I know that his can be
changed on the WSUS server settings but i don't want to change it globally
for the WSUS servers cause most OUs are using the Intranet server as their
    WSUS server,
I just want it for this OU

  2. To exclude a single OU from using WSUS, and using WindowsUpdate exclusively,
simply set the "Configure Automatic Updates" policy to disabled in a new GPO
and link the GPO to that group.

Unfortunately it's not possible to mix 'n' match the source of the content
within a single WSUS server. All clients will obtain content from the same
source, as configured at the WSUS server.

Best option for creating a separate content source is configuring a separate
WSUS server. If it's a small group of clients, you could conceivably do this
in a VM on the same WSUS server.
